Preheat griddle to 375°F.
·
In a large bowl, sift together the flour, baking powder, sugar and salt.

In a separate bowl, whisk together the milk, eggs and oil.
·
Push the dry ingredients to one side of the bowl then pour the wet ingredients into the opposite side.
·
Slowly incorporate the dry ingredients into the wet. As soon as the batter comes together, stop mixing.
·
Let batter sit for 5-10 minutes. Do not remix once the banking powder has started to react.
·
Wipe hot griddle with vegetable oil.
·
Ladle batter onto the griddle. Let pancakes cook until you start to see bubbles break the surface, about 3 minutes.
·
Flip the pancakes and cook on other side 3-5 minutes.
·
Remove and serve immediately.


Banana Foster Pancakes - Syrup

Put butter into sauce pan and let slowly melt over medium-low heat.
·
Cut bananas into 1/4-inch-thick rounds.
·
Once butter is melted, add sugar and water to the sauce pan and increase heat to medium-high.
·
Boil over medium-high heat until mixture thickens slightly, about 2-4 minutes.
·
Stir in the sliced bananas and vanilla extract.
·
Remove syrup from heat.
